PROJECT IMPLEMENTED BY FACULTY RECEIVES FUNDING WITHIN NUTRITECH PROGRAM

In the Department of Dietetics and Food Research at the Faculty of Science & Technology, a project entitled "Development of innovative vegan instant products using alternative emulsifiers, including plant proteins, enriched with a fiber preparation from starch with prebiotic properties" was implemented in January. The project received funding within the government program NUTRITECH – nutrition in the light of the challenges of improving the well-being of society and climate change, co-financed by the National Centre for Research and Development. The project is implemented in a Consortium – the project leader is Maspex Food, while the R+D manager of the project on behalf of Jan Dlugosz University  is prof. Janusz Kapuśniak. The total budget of the project is PLN 7,957,901.25 (co-financing value: PLN 5,199,805.31). The aim of the project is to develop a product innovation in the form of a powdered creamer intended mainly for coffee and soups using alternative emulsifiers of plant origin, including vegetable proteins derived from food industry waste. The product will also be enriched with a fiber preparation made of potato starch, with patent-documented prebiotic properties. The recipients of the product may be people who do not tolerate animal (dairy) proteins commonly used in commercially available creamers.
